A known issue with some V-Ray 2.0 packages is that the installation might not write files to the correct location. If V-Ray doesn't appear in your SketchUp plugins menu, verify that the installation paths match your SketchUp directory, particularly if SketchUp wasn't installed in the default C:\Program Files location.
